01 -  In a sterilized large glass jar, dissolve organic cane sugar in filtered water using a non-metallic spoon. Add water kefir grains or ginger bug and fresh lemon juice, stirring gently to combine. 
 02 -  Cover the jar with a breathable cloth or coffee filter secured with a rubber band. Allow the mixture to ferment at room temperature (68–77°F) for 24–48 hours, until slight effervescence and a tangy aroma develop. 
 03 -  Once fermentation is complete, strain out water kefir grains or ginger bug with a fine mesh strainer. Cultures may be reused for subsequent batches or discarded. 
 04 -  In a pitcher, combine the probiotic soda base with fresh orange juice, fresh lime juice, and mint leaves. Stir gently to incorporate the flavors without diminishing effervescence. 
 05 -  Fill individual glasses with ice cubes, pour the mocktail over ice, and garnish each glass with a thin orange slice and additional mint if desired. Serve immediately to preserve carbonation.
