# Cooking Steps:
- Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and reserve 1/2 cup pasta water.
- Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 3 to 4 minutes until translucent.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Add sliced mushrooms, dried thyme, and dried oregano. Cook, stirring occasionally, for 7 to 8 minutes until mushrooms are golden and liquid has mostly evaporated.
- Stir in sun-dried tomatoes and tomato paste, cooking for 2 minutes to meld flavors.
- Pour in vegetable broth, coconut milk, and nutritional yeast. Stir well and simmer for 5 to 6 minutes until the sauce thickens slightly.
- Add lemon juice, salt, and black pepper. Taste and adjust seasoning accordingly.
- Add cooked pasta to the sauce and toss gently to coat. Incorporate reserved pasta water gradually to achieve desired creaminess.
- Plate immediately and garnish with fresh basil leaves and vegan parmesan or nutritional yeast.
